The grapes are harvested at exactly the right time of ripeness. The first and last grapes to be destemmed can have a difference of about three weeks before they are left to rest for a couple of days in open barrels. This starts the spontaneous fermentation without adding anything or cooling the liquid down. The mixture is pressed gently and matures for at least two years in impressive large oak barrels on its own sediment.
